Beef mini-course helps producers improve quality, consistency and value

Nebraska beef producers can learn ways to improve the quality, consistency and value of their product in a series of one-day workshops in February at North Platte, Bridgeport and Whitman. These mini-workshops will provide an introductory level instruction into the same topics addressed in the Nebraska Beef 706 three-day course. The Nebraska Beef 706 mini-course workshops are intended for producers in all phases of the beef industry, including seedstock producers, commercial cow-calf producers, backgrounders, and feedlot operators. These hands-on workshops are sponsored by UNL Extension, the Nebraska Beef Council, and Nebraska Cattlemen. The workshops are intended to benefit Nebraska’s beef industry by helping producers continually improve the quality and consistency of their product, making it as competitive as possible with other protein sources available to consumers. Producers will have the opportunity to learn the meat side of the beef industry, according to UNL Extension Educator Bethany Johnston. They will fabricate primals into boneless retail cuts to learn cut-out values and waste, evaluate market beef on video, yield and quality grade those animals, and then view the ribs for themselves. Then they will taste the differences of the steaks in a taste panel. Workshop dates and locations (each workshop will last from 8 a.m. until 5 p.m. local time): 绊 Feb. 2: North Platte , Lincoln County Fairgrounds 绊 Feb. 3: Gudmundsen Sandhills Lab , 3 miles north, 5 miles east of Whitman 绊 Feb. 4: Bridgeport , Prairie Winds Community Center Applications are due by January 20, 2010, or until sessions are full.
